Now that was a long week wasn’t it?…. Time for a great weekend! Let’s start with good coffee and tasty music as we grab our old shoe-box this time; music I’ve been playing for years and years now; always on my iPod wherever I go, it’s ‘Orgship’ since 1994 that travels with me all the time. The music could be described as ‘ambient’ or ‘triphop’. It’s easy going, it’s groovy, it’s a bit tribal too. Banana Sour Cream Coffee Cake Recipe
1 1/4 cup Sugar
1/2 cup Sugar
1 tsp Ground cinnamon
1/2 cup Butter or margarine, softened
2 Large Eggs
1 cup Mashed banana (2 bananas)
1/2 cup Sour cream
1/2 tsp Vanilla extract
2 cups Flour
1 tsp Baking powder
1 tsp Baking soda
1/4 tsp Baking soda
Preheat oven, well grease bundt pan….
Stir together 1/4 cup sugar, pecans, & cinnamon; sprinkle ½ mixture in a well-greased bundt pan. Beat butter at medium speed until creamy. Gradually add remaining 1 cup sugar, beat 5 to 7 minutes until light & fluffy. Add eggs, 1 at a time, beating just until yellow disappears. Add banana, sour cream & vanilla. Beat at low speed just until blended. Combine flour, powder, soda & salt. Fold into butter mixture. Pour ½ batter into prepared pan. Sprinkle with remaining pecan mixture. Top with remaining batter. Bake until a wooden pick comes out clean. Have yourself a lovely Senseo® Sunday!

Apple Cinnamon Coffee Cake Recipe
3 cups All purpose flour
1 3/4 cups Brown sugar, firmly packed
3/4 cup Sugar
1 tsp Baking soda
1 tsp Baking powder
3/4 tsp Salt
1/2 tsp Ground ginger
1 1/4 Tb Ground cinnamon
3/4 cup Vegetable oil
2 cups Granny Smith apple, peeled, cored, chopped
1 cup Buttermilk
1 tsp Vanilla
1 Large Egg
Oven Temp ~ 325°
Baking Time ~ 1 Hour & 20 Min.
Pan Type ~ 9 inch round pan
Preheat oven, grease and flour a round baking pan.
Mix flour, brown sugar, sugar, baking soda, baking powder, salt, ground ginger and 2 ½ tsp cinnamon in a food processor or bowl. Add oil and process until mixture resembles coarse meal. Transfer 3/4 cup of mixture to smaller bowl and stir in remaining cinnamon. Set aside and reserve for topping. Add remaining ingredients to mixture in processor and process until just combined. Pour batter into prepared pan. Sprinkle reserved topping over top and bake until tester comes out clean when inserted into center. Transfer to rack and cool slightly.

“Spanish coffee” - Its sometimes referred to as “Mayan coffee” or “Flaming coffee”.
The ingredient list consists of the following:
Some preparation is necessary. An un-ripened orange is peeled in a corkscrew fashion. Glass mugs are used for the coffee, and prepared by being dipped first in lime wedges, and then in sugar, to coat the rims. An ounce of Rum is added to each mug.
An ounce of Brandy is added to each glass next, but not without a show. The Brandy is added to one of two stainless-steel pouring containers. The Brandy is then lit on fire, the flaming alcohol is poured back and forth several times, and then distributed in equal amounts to each of the coffee mugs. The other half of the flaming Brandy is saved for later. A mixture of cinnamon and nutmeg are then shaken into each container, which causes sparks to fly from the still-flaming brandy. Coffee is then poured into each mug, which should extinguish the flames. A spoonful of heavy cream is then added to each container.
The remaining Brandy goes on last, but not without another fiery show. The remaining flaming Brandy is now poured down and around the corkscrew of the orange that was peeled in the first stage. Cut-up lime wedges are then placed on each serving plate.
The mugs are then placed on the serving plates with the lime wedges. A flaming tablespoon of Kahlua is set on top of each drink. Finally, the lime wedge is squeezed onto the flame just before serving, aggravating and then extinguishing the final flame just before consumption.
